Rating: - Insulin Control for Weight Loss and Cardiovascular Health
As the author of "THE GOURMET PRESCRIPTION: High Flavor Recipes for Lower Carbohydrate Diets", it doesn't surprise me that two thirds of today's NY Times "how-to" best-sellers are lower carbohydrate diet books. (Protein Power, Sugar Busters!, a book by Dr. Atkins and three by the Hellers). Thanks to our most articulate and heroic carbohydrate addict (Oprah), Americans are finally waking up to the destructive consequances of fifteen years of carbohydrate abuse: weight gain, lipid derangements and cardiovascular disease, hyperinsulinemia and type 2 diabetes. These best-sellers are turning the food pyramid on its head!"The Low Carb Cookbook" offers recipes that are definitely a step up from diet book fare, though perhaps not quite at the level of "The Gourmet Prescription". They also tend to be too high in total and saturated fat. (And saturated fat has been shown to increase insulin levels.) However, given the choice between these recipes and a high carbohydrate approach, I'll take this book any day! Too bad there aren't any photos.
Rating: - The "Joy of Cooking" for low carb dieters
I love this cookbook! Most of the recipes are easy to prepare and truly delicious. In addition, Ms. McCullough offers a great deal of helpful information to assist readers with making the change to the low carb dieting. Even experienced cooks will benefit from her helpful suggestions with regard to stocking the pantry, low carb cooking techniques, menu suggestions, and sources for purchasing hard-to-find, low carb staples. Thanks to this book, I have finally learned to make the perfect omelette which my choosey husband rated a perfect 10. The recipes themselves are consistently good. Ms. McCullough, through her extensive knowledge of food and cooking, has even managed to dig up some old favorite recipes that had all but been forgotten in our collective zeal for low fat eating. Thanks to Ms. McCullough, we can once again enjoy these old favorites along with her numerous other creative and delicious recipes. I hope to see a sequel to this book. In the meantime, I will continue to use this one for happily cooking and eating.
Rating: - Excellent Recipes
This is a fabulous cookbook even if you aren't on a low carb diet. The recipes I've tried are all excellent. My non-dieting companions always have more than one helping. (I haven't tried any of the desserts.) I've lost thirty pounds on this diet and the book has helped me through plateaus and kept me from getting bored. I've only found three shortcomings and they are small. First, some of the recipes are a bit time consuming. Second, the recipes don't seem to be written so you can be time efficient. For example, she never suggests that while one part of a recipe is cooking, you start work on another. Finally, she always says salt and pepper to taste whereas I prefer to be given a suggestion for the amount that will work for the average palate. All in all, however, I strongly recommend the cookbook. It makes it possible to enjoy dieting.
